Today is a trifecta of awesomeness: it’s Taco Tuesday, Two-Fer Tuesday and it’s the first day of October, which also means it’s the first day of “Porktober”! And to top it all off, I’ve got a GREAT giveaway in this post for all of you… so I guess you could say it’s actually a SUPERFECTA of awesomeness!

Costco and the National Pork Board have partnered up for “Porktober” where Costco will be offering great deals on different cuts of pork all October long! From now until October 6th they’re offering a savings of $2.50 on a package of pork tenderloins. Grab some today to prepare these two delicious slow cooker pulled pork tenderloin recipes!
The first recipe is a Slow Cooker Chipotle Honey Pulled Pork, perfect for tacos!
Spicy, sweet and scrumptious, this pulled pork is definitely one to write home about!
Ingredients (pulled pork)
- 3 tsp chipotle powder
- 2 tsp cumin
- 2 tsp paprika
- 2.5 lb pork tenderloin
- ¾ cup honey
- 3 limes (juiced)
- 3 tbsp fresh cilantro
In a small bowl combine the chipotle powder, cumin and paprika.
Rub onto each pork tenderloin.
Place the tenderloins in a slow cooker. In another small bowl whisk the honey, lime juice and cilantro together. Pour over pork in the slow cooker.
Cook on low for 6-8 hours or high for 4 hours.
Reach a couple forks in the slow cooker and watch the pork completely fall apart. Seriously, I went to pull the tenderloin out of the slow cooker to shred it and it fell right apart as soon as I stuck a fork in it. I will now be using pork tenderloin for all of my pulled pork recipes! It’s the most tender cut of pork and ounce for ounce it’s as lean as a skinless chicken breast!
Once the pork is shredded inside the slow cooker, prepare the tacos.
- 8 medium flour or corn tortillas
- ½ cup sour cream
- 1 large avocado (sliced)
- ¼ cup fresh cilantro
- 1 lime (sliced into 8 wedges)
Spoon the pork into warmed tortillas and top with sour cream, avocado and fresh cilantro. Squeeze a lime wedge over each taco.

Now that you’ve liked, followed and tweeted your way to the win, lets get to that other delectable recipe I’ve been talking about!
For these pulled pork sliders I rubbed the pork tenderloin in a delicious mixture of herbs and spices then topped it with a Dr Pepper BBQ sauce.
While traditionally I never keep soda in the house, my Mom came for a visit last week so I had to have Dr Pepper for her. I once tried to get my Mom to quit drinking Dr Pepper, she said that she would quit when I quit drinking beer…. touché Momma Bond, touché! Needless to say, I kept my mouth shut on the subject from then on
After she left there were a couple of extra bottles in the fridge so I decided to toss one in the pulled pork to make a sweet and savory BBQ pulled pork!
The result was so delicious, juicy and the perfect balance of sweetness and saltiness.
- 1 large sweet onion (thinly sliced)
- 1/2 cup brown sugar
- 1 tbsp salt
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp cumin
- 1 tsp oregano
- 1 tbsp cayenne pepper
- 1/2 tbsp black pepper
- 1 tsp thyme
- 1 tsp red pepper flakes
- 2.5 lb pork tenderloin
- 1/2 cup apple cider vinegar
- 12 fl oz Dr Pepper
- 6 oz tomato paste
Begin by placing the thinly sliced onion into the bottom of a slow cooker.
In a small bowl combine the next 10 ingredients.
Rub the spice mixture over the pork.
Place in the slow cooker on top of the sliced onions. In a small bowl whisk the apple cider vinegar, Dr Pepper and tomato paste together. Pour over the pork.
Cook on low for 6-8 hours or high for 4 hours. Using two forks, pull the pork apart inside the slow cooker. Once the pork is shredded, prepare the sliders.
- 24 Hawaiian rolls
- blue cheese crumbles
- roasted mushrooms
Place the pork on the hawaiian rolls. Drizzle with sauce from the slow cooker.
I decided to go for something a little different with the toppings and sprinkled some blue cheese crumbles and roasted baby bella mushrooms on top.
I loved the complexity of the different flavors and textures and would definitely recommend it, but honestly the pork is so delicious on it’s own that it is perfectly delectable without toppings as well!
