Warm Blue Cheese Bacon Spinach Dip

It’s rich, creamy, cheesy, bacon-y goodness all whipped up into one deliciously decadent dip!

Creamy Blue Cheese Spinach Dip Recipe

After purchasing  3 pounds of blue cheese at Costco, rookie Costco mistake! I had to figure out what in the heck I was going to make with it!

I decided that I would put my own spin on “Spinach Artichoke Dip” and instead make “Blue Cheese Spinach Dip” and throw in some bacon, because everything’s better with bacon!!

Blue Cheese Spinach Dip Ingredients

Ingredients

  • 1 tbsp olive oil
  • 1 cup onion (thinly sliced)
  • 4 cloves garlic (minced)
  • 4 cups baby spinach
  • 2 cups sour cream
  • 8 oz cream cheese
  • 1 cup blue cheese crumbles
  • 4 slices bacon (cooked and crumbled)
  • ½ tsp ground black pepper
  • ½ tsp salt
  • 1 tablespoon chives (chopped)

Preheat oven to 375°F.

Add the olive oil to a large skillet over medium heat. Once warm, add the onions and sauté 4-5 minutes.

Sauteed Onions

Toss in the garlic and sauté for an additional minute.  Add the baby spinach and cook until wilted.

Caramelized Onion and Spinach Dip Recipe

Add the sour cream, cream cheese, blue cheese crumbles, bacon, salt, pepper and chives to a large mixing bowl.

Mix well then add the sauteed onions, garlic and spinach.

Spoon the dip into an oven safe baking dish.

Place in the oven and bake for 15 minutes.

I served the dip with a warm sliced baguette to my friends and roommates while watching football and it was a big hit.

Forewarning, this is a rich and hearty dip, not for the faint of heart! 😉
