I am so excited to share my first recipe using my brand new spiralizer!
You should have seen my excitement inside William’s Sonoma when I found out they had one spiralizer left and that I was going to be the lucky owner of said spiralizer!
The woman at the store said to me “What’s the deal with these? We just got a shipment in this morning and they’re already gone.” I told her they were very big in the food blogging community, haha!
Truth be told, I’m not sure where the “Spiralizing trend” really began, but I know that a lot of people are looking for healthier ways to eat and this is a great way to transform your vegetables into something new, fun and that very much resembles pasta (with way less carbs!)
The best part is, the almighty spiralizer is not expensive! You can get the exact same one I have here on Amazon for $34.95!
Enough gushing about the spiralizer, I think I can see it blushing on my kitchen counter from here!
For my first spiralized recipe I choose sweet potatoes… because that is what I had the day I brought my spiralizer home! I added lean ground turkey and Italian herbs to make a healthy, easy one dish meal!
- 1 tbsp Enzo Basil Olive Oil
- ½ onion (diced)
- 1 red bell pepper (diced)
- 3 cloves garlic (minced)
- 1 lb ground turkey
- 1 tsp dried oregano
- 1 tsp dried parsley
- ½ tsp fennel seeds
- ¼ tsp red pepper flakes
- 2 tbsp fresh basil (chopped)
- 14.5 oz can diced tomatoes
- 3 small sweet potatoes
- 8 oz fresh mozzarella cheese (sliced)
Preheat oven to 350 degrees.
Add olive oil to a large skillet over medium-high heat. Saute bell pepper and onion for 3-5 minutes. Add garlic, saute for 1-2 minutes.
Add the ground turkey and cook through.
Place the oregano, parsley, fennel seeds and red pepper flakes in a spice grinder (or use a mortal and pestle to grind by hand.)
Add the ground herbs to the turkey.
Add the fresh basil and diced tomatoes. Reduce the heat to low and simmer for 15 minutes.
In the mean time, get spiralizing!
Slice the ends off of the sweet potatoes, peel, cut in half and spiralize with Blade C.
Add the spiralized sweet potatoes to the skillet. Toss and cook for 3-5 minutes.
If the skillet is not oven safe, transfer the casserole to an oven-safe dish and top with the fresh mozzarella cheese.
If the dish you are using on the skillet is oven safe, simply top with the fresh mozzarella and in the oven it goes… there’s where that whole “One Dish Meal” thing comes in!
Cover and bake for 15 minutes. Uncover and bake 5-10 minutes or until cheese is melted and bubbling.
Garnish with a little more fresh basil if you would like!
If you’re looking for a paleo or non-dairy dinner, simply omit the mozzarella cheese.
I made a small dish without the cheese and it turned out great as well!
