Let me introduce you to your new favorite side dish! Crispy, flavorful, amazing sweet potato fries!

Crispy Baked Sweet Potato Fries

While in Washington DC for my brothers masters graduation last weekend, we visited BGR: The Burger Joint, so that I could try their famous Lobster Roll. (See Instagram for the pic of that scrumptious lobster filled roll!)

While I went for the sandwich, I was inspired by their option to add rosemary, roasted garlic and parmesan to their fries.

Upon arriving home, I headed into the kitchen to add all three to my crispy baked sweet potato fries!

I also added Nature’s Path Mesa Sunrise Cereal for a nice little crunch on the outside of the fries!

Ingredients

Preheat the oven to 400°.

Add the Sunrise Cereal, rosemary and parmesan to a food processor.

Blend for 30-60 seconds into a fine crumb mixture.

Slice the sweet potatoes as uniformly as possible. I sliced each potato straight down the middle, then sliced vertically into “fries”, then took each fry and sliced it in half again.

*Tip: try to purchase sweet potatoes that are long and skinny, easier for slicing into fries.

Place the sweet potato fries in a large plastic bag, then add the olive oil.

Toss to coat, then add the rosemary parmesan cereal coating to the bag.

Toss to coat, then place the fries in an even layer on a baking sheet.

Bake for 30 minutes, flipping halfway through.

  • 2 tbsp fresh rosemary
  • ¼ cup parmesan cheese (grated)
  • ¼ cup Enzo Garlic Olive Oil
